By the end of the day,

I. am. done.

In the 3 hours after work, I colored with the 6-Year-Old, ran with the boys, played catch, watched an episode of Goosebumps, and played a game of Exploding Kittens. All I want to do now is veg on the couch which, normally, includes some mindless snack or two.

Not tonight!

Tonight I decided to partake in some home cookin’ therapy. It was too dark to take photos, so I just snapped this one the phone.

I know it doesn’t look like much but in that pot is a whole lot of awesome!

  • 1 lb cauliflower “rice”
  • curry powder, cumin, turmeric, cayenne pepper
  • olive oil
  • 1 onion
  • 20 oz ground turkey
  • 5 cloves of garlic
  • 3 diced carrots
  • about 6 cups homemade chicken broth
  • 3/4 cup canned coconut milk

I roasted the cauliflower rice in a 425-degree oven on a cookie sheet with a little olive oil and the spices for about 15 minutes. While that was cooking, I browned the turkey with the onion and garlic before adding the broth, coconut milk and then the roasted cauliflower.

It is delicious!

And exactly what I needed to do tonight. Now I have lunch for tomorrow, and I didn’t mindlessly munch.

Win-Win.
